Hence, if this grill is left out in the elements, don’t be surprised if it doesn’t take long for rust to show its face. Therefore, ideally, you would keep it stored in a shed/garage.

The notable upgrade on this new Onyx Edition of the Pit Boss Lexington is the introduction of a new PID controller, which uses an algorithm instead of a simple time-based approach with the pellet feed auger to manage temperature control.

What is good to see is that this new PID controller maintains the P-Setting so smoke production can be adjusted at lower temperature settings, which is not the case on all Pit Boss PID controllers.

Unfortunately, WiFi/SmokeIT is missing on this controller. An aftermarket WiFi controller upgrade is available from Pit Boss, but its half the cost of the grill itself.

Do you really need WiFi/App functionality? Well, its not essential, and its definitely not needed when you’re purely grilling steaks and burgers etc.

However, when it comes to smoking your food, since it will take several hours, it is handy to be able to monitor and adjust the cook. Therefore, its a disappointing missing feature.

A good feature to have when it comes to getting the best grilling results from a pellet grill is direct-flame access, as it can get the grate up to temperatures of 650 degrees plus.

Direct-flame access is a feature found on most Pit Boss pellet grills, and on several other brands. However, direct-flame access does come with its own risks.

So, just to be clear, as long as the Pit Boss Lexington 500 Onyx Edition is properly cleaned frequently enough, a grease fire risk will be pretty minimal.

My point is, that pellet grills that offer direct-flame access as a feature, and if its a feature you use, these pellet grills need to be cleaned more frequently than pellet grills without the feature.

So, while direct-flame access improves grilling/searing performance, the trade-off is a higher grease fire risk. However, as stated, this risk can be mitigated with proper cleaning.

My Final Thoughts On The Pit Boss Lexington 500 Onyx Edition

For the growth of the pellet grill/smoker market, its important that more affordable options are on the market to offer people an alternative when looking to spend under $400.

Therefore, at this low price point, the Lexington 500 Onyx Edition is unquestionably one of the best options as this price point for its PID controller, direct-flame access, and cooking area.
